The Pago de Carraovejas Reserva 2011 is a red wine made from 97% Tempranillo, 2% Cabernet Sauvignon and 1% Merlot grapes, from the Pago de Carraovejas Estate vineyards.  The wine has been aged during 12 months in French and American oak barrels (new and 1 year use) and has been fined with natural egg whites.

Try it with suckling pig (in honour of José María’s, Pago de Carraovejas owner, famous dish: Cochinillo de Segovia), red and white meats, game, poultry, oven-roasted fishes, pâtés, foie and cured chesses.
