Palomino fino

“This white grape variety is the essence of Sherry. It is also planted in the north part of the country where it is principally blended with other white varieties.”

Palomino fino is the only grape grown in the sherry region and has replaced the other varieties Palomino de Jerez and Palomino Basto. Palomino Fino grows on the chalky Albariza soil and under the extreme continental climate of the Jerez & Sanlúcar de Barrameda region in Andalucía, with sizzling hot and dry summers. This grape variety gives dull wines, with low alcohol levels, which is a virtue as these neutral wines are aged in the classic “solera and criadera” system of Sherry where they gain matchless complexity and pungency. It is also used in a minority proportion in still white blends in BierzoRioja and Rueda.

We like Palomino because even though its neutrality as a dry wine, when aged in the “solera and criadera” system of Sherry it allows to produce some of the most complex and best value-for-money wines in the globe. Moreover, it is native from Spain, from the Andalucía Southern region.
